Unlike the red sort, this lentil has a strong, slightly peppery taste, but is also perfect in combination with tomato, onion, garlic and olive oil. You can use it in stews or soups, in salads or even as a spread.
It is a source of protein and iron, which is why vegetarians often have it on their menu.
It is harder to prepare since it requires a little more cooking time (up to 1 hour) with previous soaking in the water.
