  • Mix the egg whites into stiff snow - you'll know it's stiff enough by the knife mark that will remain visible if you walk through the snow.
  • Add powdered sugar a little at a time, constantly mixing quickly.
  • Separate two spoonfuls of the resulting mixture, which you will use to coat the stars.
  • Mix the rest of the snow on the lowest speed, gradually adding vanilla sugar, cinnamon and approximately 15 dag of ground walnuts and almonds.
  • Add the rest of the walnuts and almonds and knead the dough until it becomes compact.
  • Sprinkle the surface with powdered sugar and roll out the dough to the desired thickness.
  • Cut stars with molds, and to make it easier, dip the mold in water before each cut.
  • Arrange the stars in a pan lined with baking paper.
  • Cover each star with a thin layer of prepared egg white snow with powdered sugar.
  • If the coating spills on the side, wipe it with a damp cloth.
  • Bake the stars at 140 degrees for about 25 minutes.
  • Leave them to cool completely, then store them in a tin box and let them rest before serving.
