Pasta with Chicken and Red Lentils

  • In a deep pan, heat olive oil and add diced turkey. Cook for 10 minutes.  
  • Then, add finely chopped red onion, followed by chopped garlic.  
  • Add diced fresh red pepper and tomato, and sauté for a few more minutes.  
  • Stir in cooked red lentils and tomato paste, mix well, and season with salt, pepper, and spices to taste.  
  • Let it simmer for 5-10 minutes to allow the flavors to meld together.  
  • Transfer the mixture to another bowl.  
  • In the same pot, arrange the pasta in nest shapes, fill them with the cooked mixture, then add boiling water and a pinch of salt until the pasta is just covered.  
  • Cover and cook on low heat for 10 minutes to allow the pasta to cook evenly, adding more boiling water if necessary.  
  • Before serving, sprinkle the dish with coarsely crushed cashews and finish with dried or fresh parsley.
