  • Brush the tortillas with oil and place them on parchment paper with the oiled side down.
  • Prepare the aromatic ingredients: Heat broth or oil in a large pan over medium heat.
  • Sauté the onion and garlic for about 3 minutes until fragrant.
  • Add the cooked lentils and chopped walnuts, cooking for 1 more minute.
  • Stir in the spices (cumin, paprika, oregano, and chili powder) and tomato paste, then cook for 2 more minutes, stirring constantly.
  • Pour in tamari (soy sauce) and vegetable broth. Reduce the heat to low and cook for about 4 minutes until the mixture thickens. Add more broth if needed.
  • Season the mixture with fresh lime juice, salt, and pepper to taste.
  • Garnish with chopped parsley, if desired.
